While I was in Portland, Oregon I did some running. I planned on running the entire time in my Vibram FF KSO's, but I ran on a path with some rough terrain and bruised the middle of my forefoot. It's the exact spot where the ridge in my KSO's pushes on my foot, so those were out of the picture.
My Dad has a pair of Nike Free 3.0's. These are a minimalist running shoe designed to have very little stabilization. I borrowed them and went for a few runs. I did a run of 2.6 miles while out picking up Thai food. A run of 3 miles and then a 4.5 mile run.
While they are pretty flat (the heel height is not much more than the toe height)and really light, the toe box is narrow and pointy. The toe area of the shoe is longest at the big toe and it angles back to your little toe. This is how shoes normally are, but the angle on the Free 3.0's is too extreme. I feel like while running my foot is rolling to the outside and pushing off of my little toe. I would like to push off with all of my toes, thank you very much.
This rolling action made the inside (ligaments / tendons) of my knees ache and get tight. This is a feeling I definitely do not have with New Balance shoes and really don't have with my FiveFingers.
All in all it's a good attempt at a minimalist shoe, but I wish it had a wider toe box and less of an angle to the toe slope.

A Couple Raw Recipes:
I made 2 batches of Raw Almond Milk tonight and had all of the almond pulp (Almond Meal) left over so I was looking at recipes for an idea of what to do with it. That's when I came across a recipe for Raw Almond Cookies and it looked really easy so I gave it a go. I mean, who wouldn't like to eat the cookies right after you mix them up?
Here's my take:
Raw Almond Cookies (Makes 6-8 golf ball sized cookies)
1/2 cup of almond meal
2 tsp of ground cinnamon
a little bit of sea salt
1 Tbsp of Brown Rice Syrup (you can sub. honey if not vegan)
1 Tbsp of Agave Nectar (you can sub. honey if not vegan)
1 Tbsp of Chia Seeds
a little handful of walnuts, crushed in your hands
a small handful of raisins
a small handful of sunflower seeds
a small handful of dry shredded coconut
1 Tbsp of coconut oil
Mix all ingredients in a bowl until well combined. I used my Kitchen-Aid and let it beat the crap out of the ingredients.
Roll them into little balls and enjoy. (I stuck mine in the freezer for a while because it's flippin' hot out tonight)
Raw Taco "Meat"
This is one of our favorite foods right now. Everyone that grew up in SoCal loves Mexican food, especially if you grew up in Ramona, where it is basically your only choice. Well, Fast Food Mexican is basically of of my radar now. So here is a great tasting Mexican flavored dish.
Raw Taco Walnut "Meat"
2 c raw walnuts, ground in food processor
2 t ground cumin
1 t ground coriander
2 t nama shoyu soy sauce
pinch cayenne
-Soak the Walnuts for a couple hours (you can skip this part but it ends up a little crunchier) then drain and rinse the nuts.
-Grind the nuts in a food processor
-Add remaining ingredients, pulse a few times to mix
-Serve with Beans, Rice, Cabbage, Tomatoes, Cilantro, Salsa & Avocado!
This just takes seconds and BAM...dinner is served. No fussy cooking or waiting for meat to brown in the pan. Oh, I so do NOT miss meat.

A little bit of Miso in my life...
A wonderful thing that I have discovered in my life is Miso. In the morning especially, I just heat up some water and pour it in a large mug with a tablespoon of Red Unpasteurized Miso Paste and ahhhhh, it's so nice and warm.
It's healthy and slightly nutty flavored. I love it, give it a try.

Tropical Vegan Rice
I had a few recipe requests, and for good reason...I've had some good food lately.
I'll start with a Tropical Fruit Coconut Rice Bowl:
-4 cups Short Grain Brown Rice
-2 1/2 cups Light Coconut Milk (1 can)
-3 cups water
-1 Mango
-1/2 Papaya (seeds removed and saved for a salad dressing)
-2 medium tomatoes
-tbsp of Tamari
I use a rice cooker to make the coconut rice (if you don't have one, then just make it in a pot the way you would normally make rice).
Add the rice to the rice cooker with the coconut milk and the water. Let it finish cooking.
Meanwhile, dice up the mango, papaya, and tomatoes. We all know that you don't eat the skin of the mango and papaya, right?
Put your fruit mix in the fridge to cool down.
Once the rice is done (oh, the heavenly smell of cooking coconut rice) just scoop some in a bowl and stir in your fruit mix. Drizzle the tamari over the top and let it run down through the mixture and enjoy!
I have to give my homegirl Kate a shout out for inspiring this one. I will round up her recipe (which has a little more to it...taste included) and add it to this post.

Getting Started...Getting Clean
It was a couple years ago that I started getting serious about my health and the things that I put into my body. At that time I ate normal American food (hamburgers, pasta, ice cream...), but the thing I didn't realize is that while these are tasty they aren't really nutritious. In fact they are really bad for you, but not in the way you are thinking.
There are a few ingredients that we should all just stop eating, period. If you are resigned to eating meat and dairy for the rest of your life and could "never give it up" (you can give it up by the way), you should still stop eating these items:
-Refined flour (white bread, pasta, crackers...) they put cheap flour in everything! When you eat refined flour your body burns it up so fast (like sugar) that it gives you a high right away, but then it leaves you crashed and sleepy.
It's easy to change, just look at the ingredients. If it says enriched then don't eat it. Real food doesn't have the nutrients striped out of it and then replaced by crappier stuff.
Look for 100% Whole grains.
-High Fructose Corn Syrup Look for it on the ingredient list and DO NOT EAT it...if you want to lose weight and feel healthy. On the other hand, if you want diabetes and heart disease then go ahead and gobble the stuff down just like the Corn Council wants you to. Any good product worth eating wont have this in it. So check out the label and don't eat products with this ingredient.
-Hydrogenated Oil
Ok people, this one is obvious and tricky at the same time. I have NO idea why the Federal Govt. lets this product get anywhere near our food, but they do. You have heard of trans fats by now, I'm sure. I wish I could remember the numbers but it's something like, for every percent of your daily calories that comes from trans fats, your risk of heart disease is increased by 23%!
Personally I don't want to die at the age of 45 from a heart attack...do you?
So here is the tricky part. The FDA, in their infinite wisdom, thought it would be good to trick you. If a "Serving Size" has less than .6 grams of trans fats, then the Nutrition Facts Label can say "Trans Fats...0". The food companies don't want their label to say that it has trans fats, so they adjust the serving size to be just right so it will have 0.5g of trans fats per serving. Then we go and eat 6 servings and get 3 grams of death, er...trans fats.
You have to look at the actual ingredients and NEVER eat anything that has the word hydrogenated on it. That includes "partially hydrogenated" "fractionally hydrogenated" or anything with the word hydrogenated. Real food isn't hydrogenated!
So this is the first step to a better, healthier you. It's easy to look at the label and just look for these three things. Write them down on your grocery list in red so you wont forget. Now a days there are a lot of products without these ingredients, so put your "favorite" back on the shelf and find an even better new "favorite".
Pretty soon you will have these items memorized and it will be second nature. Then you will be ready to get even cleaner.

Vegan
Well, you all knew it was coming. This is my first blog about eating Vegan, of what is sure to be many to come.
There are a few reasons for someone to eat vegan. The reasons that I see are:
-Stopping the suffering of beings (aka. animals)
-Helping the environment
-Health
It is this last one that is the most important to me. I see it as the health of me (first and foremost. You have to put your own health first before you are truly free to help anyone else in this world.), the health of human kind (every choice we make has an impact on every other human and being in this life and the future), and the health of the world as a whole.
I'm not going to rail against the meat or dairy industry. There are plenty of books and websites out there to do that, and I think we all know that it is pretty atrocious anyway. Instead, I want to focus on health and I think everything else will fall in line automatically.
Let me give you some examples. Since I have been eating vegan I have lost weight to a level I never thought would be so easy to obtain. I didn't even exercise and the weight was falling off! Then exercising became easier for me and more enjoyable. My mood has been lifted and I have a serene feel about life. I used to feel "sick" at least every two weeks (congestion and overall grogginess). I cut out dairy and BAM haven't felt bad since (2 months).
So by now you may be thinking, "there's no way I could give up meat or cheese. What would I even eat?"
Eating Vegan isn't about giving things up. It is about gaining all kinds of great foods that help us feel awesome. Meat and dairy make you feel good for a few minutes and then they let you down. It's like someone in an abusive relationship, why do you keep going back?
I want to keep this short so I think this is enough to think about for today.
Some things to think about in the future will be: What should we eat? Health vs. Bad ingredients. Supporting Local Agriculture and Stores.

Owen Running
This kid can run, and run, and run. I told him that the lanes are tracks and that the numbers on the lanes are for the different engines from Thomas & Friends.
Lane 1 - Thomas
2 - Edward
3 - ???
4 - Gordon
5 - James
6 - Percy...
This is at the end of, probably, lap 5 for him. He runs between 4 and 6 miles per hour.
Ella was doing "Karate moves" on the bleachers while we all ran. She did a lap or so first though.

A New Beginning
Hello everyone,
This blog is to be a documentary, of sorts, showing the evolution of health and wellness in my family and hopefully the world.
Life is definitely a journey, and mine has been no different. We view our lives on a daily basis, so we don't realize that they are ever evolving. But when we look back at all of the things that we have been through we see a timeline of progress (hopefully positive) that shows all of our thoughts and choices.
Hopefully you enjoy stories of food, outdoor activities (aka exercise), and family.
