A Couple Raw Recipes:

I made 2 batches of Raw Almond Milk tonight and had all of the almond pulp (Almond Meal) left over so I was looking at recipes for an idea of what to do with it. That's when I came across a recipe for Raw Almond Cookies and it looked really easy so I gave it a go. I mean, who wouldn't like to eat the cookies right after you mix them up?

Here's my take:
Raw Almond Cookies (Makes 6-8 golf ball sized cookies)

1/2 cup of almond meal
2 tsp of ground cinnamon
a little bit of sea salt
1 Tbsp of Brown Rice Syrup (you can sub. honey if not vegan)
1 Tbsp of Agave Nectar (you can sub. honey if not vegan)
1 Tbsp of Chia Seeds
a little handful of walnuts, crushed in your hands
a small handful of raisins
a small handful of sunflower seeds
a small handful of dry shredded coconut
1 Tbsp of coconut oil

Mix all ingredients in a bowl until well combined. I used my Kitchen-Aid and let it beat the crap out of the ingredients.

Roll them into little balls and enjoy. (I stuck mine in the freezer for a while because it's flippin' hot out tonight)


Raw Taco "Meat"
This is one of our favorite foods right now. Everyone that grew up in SoCal loves Mexican food, especially if you grew up in Ramona, where it is basically your only choice. Well, Fast Food Mexican is basically of of my radar now. So here is a great tasting Mexican flavored dish.

Raw Taco Walnut "Meat"
2 c raw walnuts, ground in food processor
2 t ground cumin
1 t ground coriander
2 t nama shoyu soy sauce
pinch cayenne

-Soak the Walnuts for a couple hours (you can skip this part but it ends up a little crunchier) then drain and rinse the nuts.
-Grind the nuts in a food processor
-Add remaining ingredients, pulse a few times to mix
-Serve with Beans, Rice, Cabbage, Tomatoes, Cilantro, Salsa & Avocado!

This just takes seconds and BAM...dinner is served. No fussy cooking or waiting for meat to brown in the pan. Oh, I so do NOT miss meat.
